Top tip with sausages. Always cook them for half a hour...if a big one. Brown them on a high heat and then just leave them on a low heat for the rest. You'll taste the difference. They will be perfect...and even the cheaper ones taste better as a result.

Yep a good 25 to 30 minutes. The slower the better.

an hour, or do you grill them on high first turning often, before the oven treatment?

This is very often our house on a Sunday morning. The smell of cooking sausages spreading around the kitchen whilst everyone sleeps and I sit quietly with a coffee and the paper is my time.

One of the top chefs on the telly put me on to this....He initially browned them off and then just slowly fried them in the same frying pan on a low heat...turning them every now and then ...but the secret was to just let the flavours in the sausage come out by slow frying them. He was quite passionate about it. About half an hour...and they caramelise that way in the frying pan...that you don't get in the oven So I did it and it made a hell of a difference. They were fantastic. Always do it now.
