I ran past the Castle Park pitch on Saturday and there seemed to be two games going on at the same time! Is that normal? Also the big scoreboard appeared to have a score of 301 on it, unless I misinterpreted it, was that right?

First XI games are single pitch.

Occasionally Second XI and Third XI games are played on adjacent Castle Park pitches. This is possible because the "square" is now huge (wider than the Oval) and the playing area extended. Fact: when County Cricket was played at Castle Park, from pitch to pavilion was the "longest walk for a duck" in professional cricket. It is a surprisingly large area.

Eventual Essex Second XI Division One Champions, Upminster Second XI scored 301-6 in their allotted 40 overs. In reply, Colchester scored 256-7.

BTW, groundsman Jez Sadler yet again had the best season's aggregate pitch marks (from Umpires and Captains) in the Essex League. If you want to play on the best track in Essex, this is it. Fact: in 1932, Arthur Fagg scored a double century in each innings of a County Championship match at Castle Park, a feat never repeated at any other ground. What makes this more remarkable was it was a three day game. Jez can't claim credit for that pitch.
