Also coming from a guitar background-- I'd check my tune Keys, are well secured, and the bridge is inplace. Honestly I've never had much of problem with tuning when changing string weights, I do this all the time on my 12 string accoustic and never had much of an issue... now my strat's bridge tends to pop out more often than I'd like.
My other thought would be (and this probably more from computer guy mind) that I'd buy up another set of strings if I could and throw them on, and see if you just got bad luck and the first new set were just crap. Then you can promptly send the first set back to the manufacturer for a refund.
