Did you know the term comes from the Earl of Derby who allowed his name only for the Epsom horse race and the Rugby League fixture between Wigan and St Helens. This because Wigan was at one end of the Knowsley estate (still very much there) and St Helens at the other.

Not a lot of people know that.

So the only real "derby" is that between the pie eaters of Wigan and St Helens .

Which Earl of derby? If it's the former Pm who died in 1869 I doubt there were housing estates then.

It is.
I have relatives in St Helens and been there quite a few times.
The Knowsley estate is in the posh side of St Helen's near the football ground ( Prescot Cables FC )
Sadly the town's major employer. Pilkington's, has I believe reduced their staff numbers dramatically.

An alternative view :
The Shrovetide game referred to at Ashbourne, was originally played in Derby itself, between the parishes of St Peter’s and St Michael’s, with the goals being the river Derwent and the Markeaton brook, the start or “Upping” taking place in the Market Place. A French prisoner of war was heard to remark, on witnessing the game, “My God, if this is what the English call sport - what the Hell do they call war?” Because of the damage and disruption to trade in the town caused by the game, the mayor tried for many years to get it banned, even calling in the militia. He eventually succeeded in the later half of the 19th century, and by way of compensation, allowed a smaller, controlled version of the game to be played on local common land. So not only was that the origin of a ‘local derby’, but could possibly be considered the forerunner of the organised sport of football

No need.
Derby's estate is still massive,it stretches over counties.
Knowsley Hall ,their home, was/is rented out to Merseyside Police police for communication training . Spent many a course there.
The Pie Eater v Saints derby is very tasty. Fireboy would confirm that even though we are Widnes supporters.

My cousins and their children are Saints fans, as was their late father.
The passion they have for the club is unbelievable

There's nowt else in St Helens .
The accent changes at one roundabout by the Safari Park. One one side scouse,t'other Saint accent. It's not unlike the Loughor bridge I suppose although more stark .

Did anyone find out whether the ‘Doube’ was an hilarious mistake or whether it was purposely done?

I imagine it was some guys who has had a few the night before or on the morning thought they were spelling it right.
Either that or maybe the guy was genuinely poor at spelling ?
