Yes. Also turkey thigh mince has become a favourite of mine. Really good with curry spices and chilli's!

Back to potatoes. Lots of baby potatoes around this time of year which are nice just boiled. If any leftover just cut in half and roast in the oven or fry.

Also oven sauteed potatoes lovely. Raw thinly sliced put on a baking tray. Season and drizzle with oil. Cook in oven for 20-25 mins. Check not sticking every now and then.

I’d never have made a chef, but I love cooking and all things considered, I guess I’m not too bad at it.

Been really going to town since lockdown, placing emphasis on eating well and relaxing as I make everything from scratch with no pre-prep’d sauces. On the weekend I made a spicy veg curry and accompany daal that was, even if I say so myself, yum!

Also been doing a lot of roasted stuff using all sorts of spices to see how they work. Nothing to lose.

In lieu of a zoomposium social event tomorrow, I made a big batch of chilli con verdura. I always find 24 hours later, so many ‘stews’ taste better, and so I’ll enjoy it with a recent arrival in the parish, some London Pride...’kin ‘ave it!!

All things considered, I’ve enjoyed it even more and eaten healthily into the bargain.

This system works a treat - pick your own marinade and if you can finish it on the bbq = x 10.

I made a souvlaki herb/yoghurt/lemon juice mix - very simple and it works. If using wooden skewers make sure you give them a good soak.



Edit: a mixture of breast and skinless thigh filets works well.
