I love jacket in potato!

My way of doing things is after I've cooked em I prod potatoes with a folk multiple times so they are full of holes.

I then sprinkle salt on top and next add a spread-layer of margarine or butter and let it melt/sink into the holes. I then add a final covering of salt

You get a more appetising/flavoured end product that is not cardboard dry.

Margerine?

This is even better. Get some parsnips, peel them, slice them lengthways then again.

In a roasting tin, cover the base with some olive oil. Place the parsnips in the tin, season with salt and pepper and fresh rosemary. Drizzle honey over the parsnips and put them into a hot oven. After about 15 mins take them out and give them a good shake and place them back into the oven for another 15. Cook to how you like them - caramelised or not.

You will thank me later for the taste and the smell.
